Energy Bites
Ingredients
1 c rolled oats
1/2 c natural peanut butter
1/4 c honey
1/4 c chocolate chips
2 T ground flaxseed
1 t vanilla
pinch of sea salt
Instructions
Mix all of the above ingredients together and form into 12 bites (each one roughly the size of a golf ball)
Roasted Chickpeas
Ingredients
1 can chickpeas, rinsed and drained
1 T extra virgin olive oil
3 t Cajun seasoning
1 t sea salt
Instructions
1. Preheat oven to 400F. Line a rimmed baking sheet with parchment paper.
2. Pat rinsed chickpeas with a towel to get extra moisture off. Combine with oil, cajun seasoning and sea salt.
3. Bake 35 to 40 minutes, stirring halfway through. Remove from oven and allow to cool.
